A Medieval Inspired Journey: Carw Gwyn’s Grand Opening
In a vibrant neighborhood in Denver, the Carw Gwyn Mead Bar, designed to transport patrons to medieval fantastical realms, officially opened its doors on November 12. The establishment is the brainchild of Douglas Wagner, who after facing numerous challenges and bureaucratic hurdles, finally realized his dream of creating a mead-centric experience in the City Park West area.
Murphy’s Law and Permitting Delays
Wagner's story mirrors that of many new entrepreneurs navigating the sometimes treacherous waters of city regulations. Originally hoping for a July opening, Wagner faced unexpected permitting delays he described as "convoluted and opaque." From retroactive permits to fire code inspections, the process became a financial strain. Wagner stated that the total costs exceeded his initial budget by $100,000. This mirrors the experiences of other local businesses, like the recent opening of a Mexican restaurant in Jefferson Park which also faced delays due to city inspections, highlighting a broader trend that many new ventures in Denver face.
Carw Gwyn’s Unique Offerings
Despite these setbacks, the mead bar has emerged with an exciting offering. Carw Gwyn features a rotating selection of 20 meads made locally along the Front Range, aimed at both aficionados and newcomers eager to explore the oldest alcoholic beverage known to mankind. Alongside meads, patrons can enjoy beers, ciders, whiskeys, and a curated cocktail list, including the intriguing Deerhound cocktail that fuses vodka, mead, and grapefruit.
The Menu: A Culinary Adventure
In addition to beverages, Carw Gwyn offers carefully crafted food items, including hearty stews, a sausage platter, and charcuterie options. Notably, the inclusion of Cornish pasties sourced from local favorite, The Pasty Republic, further cements the tavern's commitment to embracing local businesses in its culinary journey. Visitors can look forward to themed events, such as live music and storytelling, fostering community connections reminiscent of historical tavern culture.
A Vision Realized
Douglas Wagner brings with him a passion for history and the medieval period, reinforced by his work with the Rocky Mountain Swordplay Guild. His multifaceted background not only enriches the bar's theme but also builds unique storytelling opportunities. After 27 years at the Denver Art Museum, his transition into the culinary world reflects a growing trend in Denver where tradition meets innovation, attracting a diverse audience of families and singles ready for new cultural experiences.
